1. Ready to start cooking/smoking in just 15-30 minutes!  Just light off a small amount of coals first.

2. Easily manipulate temps up & down as needed.  For example, the recovery time after opening the lid for a bit is like 2 to 3 minutes.  You won’t have to worry about losing all your heat by opening up the lid to baste your meat, then having to wait for 10 to 15 minutes for it to come back up to temp!  Also, these short 2-3 minute temperature swings won’t have a negative impact on your cook.  Wild long lasting temperature swings during a cook are notoriously known for producing dry overdone results.  Not with smoker barrels once you learn their easy maneuverability.
